I bought some "medium roast" single origin mexico beans and they turned out to be burnt to hell, now I can't return them because I threw out the bag and receipt.
They taste like shit and right now I'm making some cold brew to see if they can be saved, if not I'm just gonna throw them out because they smell awful.

The grounds spend less time in hot water with a pour over, so you're less likely to get the bitter acidic flavors from the beans. IMO, this makes the pour over superior, but if you've got some amazing beans you might want to give the press another shot. It depends on the cups. If you serve them two different stale burned ash beans from Starbucks brewed in the same way, they definitely won't know the Kenya from the "Holiday Blend". But if you serve them a french press and a pourover, they will know the difference.

I have a cheap ass Mr coffee brand espresso maker that I use daily, I have a double shot in the morning, or quad if I'm really fuckin tired. I use Starbucks espresso roast, or Sumatra roast, because I work at Starbucks and I get coffee beans for free

If I really feel like it I have a French press that is really nice occasionally. And I also have a large drip Brewer for family events and shit.

My mom and dad use a Keurig machine with Starbucks blonde roast.

What is the best amount of beans to use in a french press? I have a bodum press, dont remember the exact size. But it seems like sometimes its too little and other times just right and rarely too much even though I use the sameish amounts each time (only +/- like.. A teaspoon or less at a time). I just end up with wildly varying brews.

I tend to use enough beans to cover the entire bottom and then use my grinder. Is it the grind size? I try and grind it to a small size but not too powdery.

I would suggest you getting a cheap kitchen scale. Depending on the beans, 12 gr can make too strong or 20 gr can make too little.

Coffee does not need to be bitter, but it can be, and some people prefer that.

Any coffee will be bitter if brewed improperly. Overcooking the coffee will create bitterness. A dirty coffee maker with old coffee residue in it will create bitterness, because the old residue gets overcooked. How long it takes to overcook coffee depends on how hot the water is, and how fine the grounds are.

A light roast coffee that is not overcooked will not be bitter. These are delicious to drink straight black.

I bought a cheap grinder for $10 and some Sumatran Mandheling beans (med-dark). When I was really poor I used to have a coffee sock where I would take a sock and fill it with a cup of ground beans and boil the sock in a pot of 16 cups of water. The sock was clean, right out the package. I used the womens socks that are ankle-cut and kind of thin but they obviously were good quality and had no holes for the grounds to seep out when stretched.

I'll give you guys a "trick" I adapted from seeing "folgers single serves". Basically, I go to local coffee house that roasts beans daily, buy about a pound at a time, just the whole bean. I got a crap "magic bullet" for a grinder, but most cheap grinders use exactly same flat blades anyway and it works, so whatever. I grind up the beans to whatever i feel like consistancy and then< and here's the slick part,
I use a funnel and bought some "teabags" for a teapot (they are fairly long) and I fill it up to about a quarter to just shy of half and put that in the travel mug/whatever, and fil it with water I boiled in an electric kettle. I leave a section of it hanging outside and screw on the lid to pinch off the opening so it don't fall into the mug / leak out. I just let it steep in the mug, the longer it sits, the more it gradually gets to a espresso type flavor. obviously to taste. Then clean up is just throwing the "teabag" into the trash, rinse out mug. Fucking simple. Thanks folgers, I'll never have to waste time buying your stupid coffeebags again. ;P
It's like a french press without the "hassle" and if you just leave it in, you forget about it and when you come back to drink it you get super strong coffee buzz. Obviously the quality of the beans is vital, I use "Mild" beans so that even at their strongest it's really only slightly acidic and doesn't taste like burnt espresso.
I hope this helps whomever hadn't thought of it before, obviously expreiment to get results you prefer.

That's fucking retarded. The reason you cold brew over any other method is to get a different flavor profile than you would with hot brewing. Different flavors are able to come out of the coffee and it's less acidic leading to a smoother cup. What you are doing is making hot coffee and then cooling it fast diluting it with ice. Put water and coffee grounds in a mason jar in the fridge for a day like you should be doing and enjoy real cold brewed coffee.

I use 100g of beans to 4 cups of water (100g is approximately 1 cup ground beans). Use a grind just a bit coarser than you would for a french press. I have a hario burr grinder and 15-16 notches is perfect don't know what grinder you're using though might have to experiment. Leave it to sit in your fridge for 18-24 hours then strain storing in air tight container. You don't even have to put it in the fridge during brewing a cool dark place is fine.
