Looking for a good European style chef knife... suggestions?

Story:
My roommate told me he would bring knives to our apartment and I came to find out he bought these eversharp meme knives. Needless to say, they suck ass. They literally can't slice anything. Ideally, I would just kick his shit off the countertop, but I don't really have that kind of money, and I don't want to piss him off. So, I'd like to have at least one good, do-it-all knife that I can keep in a drawer. Knife needs to be able to prep veggies and slice meat. Any suggestions and experience would help. Thanks guys.

What's your budget? The IKEA 365+ knife with the 8'' blade is pretty good. If you can afford more I 'd try the Wüsthof Classic, available either with or without bolster, or if you are loaded try the IKON. Both in 9'' preferably, the perfect size. Dexter Russell and Mercer also offer various product lines for different budgets.

$200 at the absolute most if it's necessary.

... preferably under $100 though

Around $100 is the most I'd want to spend. I could do a little more, but it would really have to be worth it.

Did a bit of searching and found this offer:
https://www.amazon.com/gp/offer-listing/B000SM762A/ref=sr_1_1_olp?ie=UTF8&qid=1505641377&sr=8-1&keywords=w%C3%BCsthof+classic+9-inch+cook%27s+knife

the first one, "used like new". Most likely just a display model with some scratches on the blade, or a damaged box. Sounds like a really good deal. That knife will last you the rest of your life, and it's genuine quality..

Where does OP say that he is barely going to use it? He might need it for his three homecooked five-course meals every day.

They're quite expensive though, but I have to agree, even the victorinox peelers I have now don't come close.

>He fell for the Fibrox meme
Get the Mercer Millennia Line. They are basically the same thing as the Victornox Fibrox line except they are made in Taiwan so they are about 2/3rds the price. This is exactly what most real culinary schools use.

Or get the Amazon basics set:

It's bad enough that you have to shill this hard for that awful brand, but at least try to keep the straight out lies to a minimum.

I use swiss line when cooking, they are good quality, relliable, made of stainless steel and amazon do a set of 6 for £10.
At the end of the day provided you keep them sharp they are great knifes and have lasted me for years and ive never had a single problem with them yet.

What's a good budget waterstone in the 200-400 grit range?
