Brown it in a pan and finish it in the oven. Fast, high heat. Don't over cook it.

Sous vide 60C for 1 hour with salt, pepper, and rosemary. Take it out of the bag and dry as much as humanly possible. While you're drying and for the last few minutes of the cook get a cast iron pan as hot as it goes. Drop some butter or oil in there and put your pork in. Check the progress of your pork with tongs and once its suitably brown flip it and do the same on the other side. It shouldn't take more than 30 seconds on either side.

Don't overcook it is the right way. Pork loin is just fine if it's a touch pink in the center, but barely edible if it gets overcooked and dries out.
