While I certainly agree about anon's dad and the sheer ridiculousness of anyone mistaking cake for any style of cornbread, I was under the impression that the main difference between Southern and Northern cornbread is that yankees put a half cup of sugar and a bunch of whole corn kernels in it, whereas Southerners either do barely a teaspoon or omit sugar entirely, and don't put any whole kernels in at all.

I got the egg whites seperated this time perfectly with a little patience, but I think I messed up folding it into the batter because it didn't gain too significant an amount volume from it, but I was trying to make sure it it was thoroughly mixed with the batter.

Fucking this. I love a good carrot cake. None of my friends like it, nor does my girlfriend, because they're triggered by carrots and raisins in cake. But every year my gf throws a birthday party for me, and always makes me whatever kind of cake I want.

And it's always carrot cake.

I only found out this existed last year. Asked my gf to make it for my birthday. She put a ton of work into it, and then the bottom of her cake carrier fell out while she was transporting it. We salvaged it and it still tasted amazing, though.

I live in sweden, and I've never seen anyone put shredded carrot cake on a carrot cake. Maybe it's a regional thing?
It doesn't really make that much of a difference though, it's delicious with or without the coconut
Maybe if you wanted some decoration you could get orange sprinkles?

Angle food cake. Home made.
Let me tell you a good recipe.
Take a couple of 16oz mason jars like pic related.
Fill that bitch to the top with egg whites(you won't waste the yolk i have a recipe for it too)
Whip them in a blender or by hand if your hard to soft peaks then add
>1-1/2 tsp cream of tar tar
>2tsp vanilla extract
>1/2tsp almond extract
blend until firm peaks
Then in another bowl take;
>2 cups flour
>3 cups sugar
>salt
and fold the whites and dry together. Pop in a NON preheated oven, set to 350 and let it bake for 55-60 minutes

Take the egg yolks and add milk and some vanilla extract and cinnamon. This can be stored for a week or two and used for french toast. Make sure you use thick texas toast.

You can do in in a preheated oven, 325-350, but the important trick is to not use flour or grease or a non stick pan because the batter climbs up the sides while baking in order to be light and fluffy.
