Here's one I don't even know the name of, I just copied it from a friend.

>grate carrots to about pic related
>1 tbsp of butter in pan
>add carrots and one minced clove of garlic
>stir constantly on medium to high heat until the carrots soften
>add white wine and turn the heat up
>add cream
>turn down heat until the sauce is yellow
>salt, pepper

Shit goes great with chicken and rice

Can vouch for this, my mother did up this exact dish except it was chicken thighs instead of lamb. Shit was so damn good, the raisins and the carrots were the high notes for me.
