Simple and delicious! Being that pork and sauerkraut is a New Year's Eve tradition I had to make this and boy was it good - not only for the ease of prep but for the taste. I didn't add the optional baby potatoes and used two bags of Boar's head sauerkraut. I also threw in a thin sliced Granny Smith apple and a little brown sugar (this takes away the tartness of the kraut). I made this before I went to bed New Year's Eve and it was done for New Year's day. Perfect with mashed potatoes and sweet peas!

I would definitely recommend softening the croutons/stuffing cubes in milk or water beforehand. I lined the bottom of the pan with the dry stuffing (plus sauteed celery and onions for flavor), placed the chicken breasts on the stuffing, added the cheese and soup mixture, and then topped with additional stuffing. The only complaint that I had was that any sauce that would have been created for the chicken was absorbed by the stuffing underneath, which created a wonderful flavor for the stuffing, but left the chicken a little more bland than I would have liked.

That's why you soak your stuffing cubes in STOCK instead of fucking flavorless water. That way they're already flavored and the chicken flavor will remain in the chicken.
