Lacinto kale can substitute for lettuce because it's tender. The kind in your pic, unless picked very young will be too tough.

To me, they're not the same at all, other than the fact they're both leafy greens. I enjoy baby kale in my salads, and I enjoy cooked kale in other dishes, but on sandwiches, burgers and in a salad green mixture, I have to have my red oakleaf lettuce and my curly green leaf lettuce.
