What's the best way to prepare potatoes, specifically as a side dish? I fry them every day and I'm starting to feel bloated.

You're eating the wrong kind of potato then. Stick with sweet potatoes.

Boil medium size cubes in a pan with just a bit of water and soy sauce until it all evaporates.

If you mash them you will be tempted to add too much butter and milk. So I compromise by boiling them in small chunks until very tender. Then toss in a little bit of butter or cream and dried herbs, salt, pepper. I prefer dill and parsley. Reliable side dish but lighter on the fat than a loaded baked potato, mash, or hash browns.
