what food is being served on that footwear? I'm guessing here, but maybe it's a "deconstructed" key lime pie?

I'm thinking that the brown stuff is crumbled graham crackers and the green balls are spheres of key lime pie filling that are held together with some modernist cooking technique. I've seen faux caviar pearls made, so maybe that process was scaled up for OP's pic?

Anyone else have a guess?
