It's mostly because it's more complicated to reliably temper chocolate so it's solid at room temperature.

I dip mine in double boiler melted Guittard semisweet chips then harden in the freezer. The textures are really nice.

I've only seen it done at buffets where they have a fountain of what appears to be chocolate but is obviously not. Usually there's a shitload of little unrestrained spawn dipping their fingers in it and licking them so only people who like human skin cells with their chocolate style product would do it.

the pH (acidity, alkalinity) of a fruit has absolutely nothing to do with the amount of sugar it has. The acid eats away at the enamel on your pearly whites just as much as everything else bad. Maybe worse. It's why diet soda will still give you meth mouth despite no sugar. The acids in it.
