If you're in Mexico, the food changes depending on the region. Where I'm from, which is north central Mexico, all we eat is steak, cheese, beans, and bread. The more Central you go, you'll find a lot more corn and chicken and less beef. Down south, you'll encounter mostly vegetables and beans and stuff like that. There is beef and pork and chicken everywhere, but it is so much more expensive down south than up north. In the north, you pay out the ass for tropical fruits and vegetables that are abundant down south. The land over here is very similar to the land in Colorado. There's livestock farms everywhere, so meat is very cheap, so people eat mostly meat and animal products. Around this time of year, I usually crave some ceviche with tilapia or shrimp to keep me cool when it's hot.

There's no lard involved with carnitas. Think of it like pulled pork. You cook it low and slow until it's fall apart tender.

Get some pork shoulder. Cut it into large chunks. Season it with salt and pepper and then brown it on a grill. Don't worry about cooking it through, just get some color on the outside.
Put the chunks of pork into a big pot, dutch oven, or slow cooker. Add some mexican oregano, chopped onion, chopped jalapeno, and a little chili powder (ideally from Ancho chilies). Add a little beer or stock to get some liquid in there and then cook low and slow until it's falling apart tender.

As usual, it depends on the state. My parents are from Guerro and a big thing over there is mole verde (pic related). My parents love it, but I heavily dislike it. It's made of ground up seeds, so it's a bit gritty and slightly bitter. It doesn't help that the chicken is kept plain. Usually, the dish is accompanied with tamales nejos. Unlike normal ones, they have no filling on the inside and have a funny taste from being made with banana leaves. They're actually pretty good.

One thing I do like is the cheese. At room temperature it's rubbery and smells funny, but it's still alright for snacking. My favorite is when my mom cuts up pieces of it and cooks it with a green salsa. Despite being it's wedge shape, the pieces of cheese internally semi melt. And the salsa adds flavor without making the dish spicy

Traditional Mexican food is pretty good. Its up there with the top cuisines I'd say. Mexicans have a good food culture and like to cook. They use a lot of cool ingredients and have some sophisticated and complex flavors. American Mexican food is good on occasion but it is its own thing.

I spent a week in Arandas, Jalisco and the food was great and dirt cheap. Went to Puerto vallarta for a few days to finish off the trip and the food was the same price as in the states and tasted like shit. At the resort the menu consisted of nachos, quesadillas, burritos, burgers and hot dogs. Fuck all that.

We Americans spend an awful lot of money on things that aren't necessities. We often buy larger houses than we need. We attend totally optional activities/events. We buy boatloads of toys for our children. We have expensive video games. Tricked-out fancy cars. Expensive golf clubs, fishing gear, radio-controlled models, and gaming PCs. We have fancy big-screen TVs and happily pay $100/month or more for premium channels so we can "watch the game". We have so much money that we often hire someone else to mow the lawn and do other chores for us--and then we get fat so we pay even more money to go to a gym to get exercise.

We even have so much money that we can afford to buy pre-made and fast food even though we could make it ourselves for a fraction of the cost. Learning how to sew? Lol, we don't need to. The best way to figure this out is to try and make simple Mexican dishes.

Get some freshly made tortillas from a place that caters to Mexicans, just go to the Mexican part of town if you are in a big city, at 7 am they will be making them and will probably stop making them by 10am and selling them by noon. or make them fresh yourself. Don't buy from WM or the like.

Buy Rogelio Bueno, or Doña Maria mole, boil some turkey or chicken in salty seasoned water, make some rice by lightly frying it adding onion a little corn and some hot peppers when you add the water you used to boil your turkey or chicken. Cook the rice fully and top with turkey dark meat and mole.

This is just one simple dish you can prepare. There are a bunch.

As a northern Mexican the Rogelio Bueno is my go to "fast food" version of mole. The flavor is good enough.

You will probably be able to find old ladies selling tamales out if the trunk of their cars in these parts if town too, probably give them a shot too.

Best to cook this outside

Take a pork shoulder with bone have butcher saw it into fist sized chunks

Picnic is also an acceptable ut it needs to be proccessed and skinned. If using the skin, shave the small hair if necessary

Leg joints, belly, and ribs are great too.

Use a couldron type cooking vessel

Add lard, enough to cover the meat being cooked but do not overfill

High heat

Heat lard until it starts slightly smoke

Add the largest chucks of meat first, move the meat around so that it doesnt stick or scorch, add the rest of the meat adding the skin last

Continually stir until a proper dark brown has been achieved.

TURN OFF Heat

Allow temp to drop.

Add 2-4 cups of water to the pot.

Turn on the heat to a slow simmer

Squeeze a couple of oranges and throw the, in the pot.

Add several cloves of garlic

Throw tsp of black peppercorns

Some bayleaves

Allow to simmer for 1 hour

Add some coca cola (preferably one with real sugar)

Add 2tbs condensed milk

Continue cooking 30min-1hr

Dissolve salt to taste in some water

Add it to the pot.

Cook until the meat probes like butter.

This is more of a jalisco style carnitas.the process to make Michoacan carnitas is pretty much the same except you omit all ingredients except meat lard water and salt.

actually authentic mesican here. carnitas are done in a big ass metal wok like container full of pig lard. the authentic way done in northern Mexico "Coahuila and some Nuevo Leon" is by doing a whole pig including organs (intestines is up to you). you skin the pig and make sure it has no hairs and is clean since you will use the skin for pork rinds throw everything in and it's up to you if you want to add in milk or citruses. after a while the skins will be tender and cooked you can eat them with lime sauce and tortillas or keep them for more rinds. as the meat cooks you steer to make sure everything is cooked evenly once you feel the meat is done you feast and save the lard for another use. btw it can be half lard half oil it depends all you're doing is frying the meat.
