Welcome to coffee general. Where the roasts are rich and paired perfectly with shitposts.
>Topics for the thread:
what's better, the grinder or the filter?

Do you make espresso? Manual or automatic? Preference?

I'm still waiting to be redpilled on moka pot. What makes it different from other immersion styles?

Huge. I started out with a Skerton and just got a LIDO 3. The difference, using my same brew methods/techniques, is fantastic. I couldn't imagine using a whirly blade.

If you're using an immersion method like french press, you're still probably getting decent coffee, but if you upgraded to a burr grinder, you would definitely have a marked improvement.

I was reading through my old notebooks and found a conversation from my classmates I transcribed a few years ago and had a question:

>Classmate was at coffeeshop getting an iced coffee
>Barista asks if they want their ice on the top or the bottom
>What.
>Do you want your ice on the top or the bottom?
>Classmate says it doesn't matter since if you put the ice on the bottom, it'll just float up to the top.
>Receives iced coffee
>Goes back in a week later, talks to different barista about the previous barista
>Hahah, that's so dumb. If you put the ice on the bottom, it won't even cool the coffee.

Does this shit make any sense to coffeefags? The second one is obviously full retard, but I think I can understand why the first barista may have asked that—if they add ice first (at the bottom) they may bias the ice:coffee ratio in favour of the ice, meaning a more watery coffee; if they do it last (at the top) they may bias it in favour of coffee and you'll get more actual coffee. Is that an accurate assessment or am I missing something?

>> No.9021012

>>9020938
Ice on the top or bottom is just a buffer baristas use sometimes to make sure the drunk is made right. Like if you order a chocolate latte they ask if you want whip cream or not. It's just to make sure you are both on the same page about what you've ordered. It's a coffee shop thing. In a way it is either saying you want the ice or the coffee first. Why it matters is beyond me but some people are picky about it. It's the same with ice coffee again and cream. Some times people want the cream on bottom, some want it on top. It makes virtually no difference but it is what it is.

It sounds like you are actually the autistic one. >grinder vs. filter
I don't know if I understand this question. Are you talking espresso/turkish vs. drip? Depends on what's going on. Paper filters -being absorbent- are detrimental to coffee, but copper, stainless, and even plastic mesh is perfectly fine for drip. I prefer to do my coffee as a shot or small drink, so I prefer espresso, but on days where I want a coffee to last me until noon, a moderately sized carafe is really the only way to do it.

>Espresso, manual/auto
I have a semi-auto espresso machine right now. It's kind of neat - the boiler pressure when built up will eventually drop the lever on its own, but it's a very strong brew at that point. A properly calibrated automatic is every bit as good as a well executed manual shot, just not as tactile. No real preference.

>Moka pot
Like a heat activated aeropress... water boils through the coffee. The end result is milder than espresso but stronger than auto drip. If you want to be able to do stovetop coffee to the nth degree of strength, I recommend a proper percolator - very similar idea to the moka pot, but it allows the water to cycle back and forth.

Then you'll have to find how you want your coffee brewed. Whether you have a lot of disposable income you may one to buy a couple different ones to see what you like. There is
>immersion brewing (French press, clever dripper)
>pour over (Chemex, hario V60)
>cold brew
>drip (standard mr.coffee and normie machines)
Kettle is recommended but I'm sure you have a way to heat up water.Take a look at these methods to start off with. Different methods need a different grind, but it is easy to look up which needs what.
As for what beans to use, anything while bean! Light roasts dark roasts all have a variety of flavors to offer you, and each different brew style also changes the subtlety of flavor.

Even an air tight container isn't going to keep ground coffee fresh. It loses its freshness in minutes, which is why everyone recommends grinding right before you brew. It's not like it's going to go bad or anything, it just isn't going to taste anywhere near as good as it could.

BTW, with all the respect to descent Mexicans I do not blame them for accepting lower wages for working in America, many of them are very descent honest hard workers.
The American businessman the American farmers and governments are at fault here for exploring this situation and therefore eventually eliminating American workers from taking those jobs for extremely low pay.

Same shit as with American businessmen moving factories to China (and now more and more to Mexico) and depriving American workers from getting employment, it's a vicious circle of greed by the businessmen.

I'm not sure why you place all the blame on "businessmen" and not the consumer.

If you had any experience operating a business you'd know that the business is the slave to the customer. The business succeeds or fails based on how well they can address the customer's needs. In this case, it's people demanding ever-cheaper produce that results in cost-cutting measures, like hiring undocumented migrant works.

Nothing is going to change unless the customers are willing to pay more money for the product.

Demanding cheaper products doesn't mean engaging in full-on protest with picket signs. It simply means they choose to buy whatever's cheaper.

You see this in every supermarket in the whole damn country. Do they have locally grown high-quality produce? Rarely. But they're got plenty of factory-farmed cheap stuff, often imported from Mexico.

Wal-mart is another great example. It's one of the biggest businesses in the country, if not the world. The whole business is built on the principle of low prices.

The reason I blame the customer is because they are the ones who enable this shit. If some businessman were to offer cheap crap built on cheating people out of wages then why don't the customers refuse to buy said product? Because most of them don't care. Even if they think they care they usually don't.

There was a fantastic article about this published fairly recently. They surveyed a bunch of people about whether or not they preferred to "buy American" or if they preferred cheap imports. The overwhelming majority--I think it was around 80%--said that they preferred to buy American. Yet, when those same customers spending habits were tracked, only about 10% of them actually put their money where their mouth is and actually chose to buy American. Most of them, despite their lip-flapping, chose to buy cheap import shit from Wal-Mart.

>> No.9031067

>>9031041
How are you this disconnected from reality?
Have you never bought vegetables before?
Vegetables are a commodity, there's no brand loyalty and stores will pick the cheapest supplier and set one price for all of the same vegetable for simplicity and convenience, it's all the same product after all.
You bring people into your store selling a few things at cost and hope they buy other more expensive things, this is how a grocery store stays afloat.
Vegetables would become much more expensive if you suddenly had to start paying minimum wage to every shit-eating american kid picking vegetables, and I'm sure they'd want benefits too.

Good morning coffee. Had a productive week even tough I'm still having exams.

Checked water temperature and the temperature during infusion. Was starting with water too hot (> 98ºC) a pan and after 3 minutes it dropped bellow 80 ºC. Now I'm using a stainless steel pan with compost bottom and the lid to keep warmer for longer.

Found one book about volatile compounds at uni so now I'm able to start writing my first pages about coffee. I'm gonna start with chemical details then write a bit about biological details like varieties. I still need to find something about history/economy and more about industrial processing.

Bought alkaline water to see what happens. Really seems to improve foam formation (read a paper saying it helps foaming espresso). Somehow this water makes acid notes more apparent. Maybe this is caused by my new infusion temperature that keeps higher for longer.

Found ABIC (brazilian coffee association) journal and that's very nice since until now I've been reading only research papers. This journal is more industry oriented. I discovered a lot of brands that I never heard before in 5 minutes. Just need to wait for money and then buy some new coffees to try.

In my city there's a college and they have agronomy course. I'm gonna check if any professor has any tip about some coffee problem that I could help researching in my conclusion paper. If negative then I'm gonna do something about water or volatile compounds. I would like to focus on cultivation of coffee but unluckly my college don't have support for this.

A question for you -- what your area of interests? Mine are food, sports, and botany. In my free time I either focus on practicing and learning about food or plants. I've been cooking for my family during colleges break and also planning and design I pot garden for home. See pic related? if you don't live in the ice or in the desert then it is just dumb to not have plants, they are cheap and improves 100% the city. Got pic is from Stephen Ellcock on facebook. Highly recommend following this account if you use facebook.

what's your clever dripper technique /coffee/?
I get inconsistent coarser grinds, so today I tried an ancient hb post's suggestion of fine grind, a bit under a minute of immersion, then a drain, with no agitation except a small swirl of the dripper itself at the end
came out ok, a lot less muddled/syrupy than my usual (slightly coarser grind, 2.5 minutes immersion, then faster drawdown), but I think my grind was too fine as the drain took like 2 minutes

>> No.9036038

>>9035997
I do a 1:16, medium-coarse grind, draw down at 3-3:15, which takes about another a minute. Never could get it right with my Hario Skerton as it produced too many fines and the draw down took forever (>two minutes). That could also be your problem
