What does /ck/ think of dutch babies? I've never tried them but they sound pretty easy to make. Worth?

I ran brunch at a fine dining restaurant for a year that we served a dutch pancake. Just getting the heat right and using enough fat to lubricate the pan is the key.

We served them is lardons (thick bacon bits slowly rendered),whatever seasonal fruit( which is strawberries right now, black berries in a couple weeks) and then maple syrup and some powdered sugar. Shits really nice if you do it right. Getting it to poof up properly is the hard part obv. Its best to use a blender to make the batter and make sure its smooth AF.

Also, I found that the hotter the oven the better the results for when I was firing them at work. Like 450+. I one time ran a service with the oven at 500 and my dutch pancakes would poof up MASSIVELY and it was awesome.

They're not bad. Pretty easy to make after a few glasses of wine laced with some ket. A bit chewy at first but they mellow out and become tender at around 6-8 months.

Bones make good stock for soup.

Made one last week! Incredibly easy, I just followed the NY Times recipe and added some vanilla extract that was missing from it.

It super poofed and never collapsed though, almost went just under a whole oven rack up.

To be honest I prefer pancakes although they're a bit more work. But yes, worth. You can put whatever you want in them.
