Sup, cu/ck/s. I've been making bread recently and I gotta say, it's pretty boring. It's soft and kind of salty, but bland. Would adding spices or onions to the dough make the bread taste better? Should I boil my bread milk to make the spices more flavorful?

You need to hit the bread crab in it weak point for massive damage.

If your bread is bland it could be because you're cutting either the first or second rise short.

Barring that, you can add all sorts of things to bread, keeping in mind that if you add any extra sugar or salt it will affect your fermentation times.

olive bread is good
walnut bread
change some of the regular wheat flour for semolina
add raisins and cinnamon for a sweeter breakfast loaf
seeded breads are good too

feel like this is a case of you baking bead two or three times and not really enjoying any of it. but it's like the other guy, there are endless options for bread. you're probably just following not the best recipes.

I don't bake much because I'm awful at it and it kind of intimidates me but I've definitely had some good motherfucking bread that I wouldn't mind eating by itself. I pretty much never do just because I love olive oil and balsamic so much on all kinds of bread, but yeah, good bread is good.

A good starter bread recipe that people really seem to like is Jim Lahey's no knead bread

No knead bread has sort of turned into a "meme-food" so to speak but it's really simple to do and doesn't really require any finesse or technique, just dump all ingredients into a bowl, mix, wait, bake. The fundamentals of bread take care of themselves and you get some crusty, open, well fermented bread.

Generally a quick bloom in some oil will intensify a spice, peppercorns, coriander, cumin, mustard, anise and others in that vein will benefit from a bloom.

Bloom the spices first then add to your bread liquid.

Don't bother boiling the spices, the only thing that will do is scald the milk. Adding them directly to your dough mix or on top with the egg/butter wash is good enough.
