Office is having a pot luck tomorrow. I want to bring something relatively healthy but still tasty. I was thinking the broccoli salad from good eats. Any suggestions?

I bring a kale salad to all my potlucks:

Take lacinato kale, de-ripped and chopped into bite-sized pieces, and rub in fresh lemon juice, olive oil, fresh cracked pepper, and sea salt or kosher salt. Add thin sliced red onions, feta or shaved parm, sliced or slivered almonds, and pomegranate seeds.

It travels and keeps well, and people appreciate a little green stuff when everyone else has brought casseroles and shit.

Personally, I think olives are Satan's testicles. BUT I recognize that other people feel differently.

I think olives might overpower the salad a little, but you can give it a try if you want.

I've also made this by prepping the kale with lemon, and then making a vinaigrette with whole grain mustard, balsamic vinegar, and olive oil. The lemon is really to start breaking down the fibers of the kale, and you can add some other kind of dressing if you want.

But definitely use lacinato kale — regular curly kale is too tough for a salad, in my opinion.

Addendum — you could probably use regular kale if you're in a pinch, but I'd chop it up and really rub the lemon into it. Like, really massage the curly kale as you're rubbing the lemon in to help it break down more rapidly.
