Did a chicken parmesan with a home made chunky tomato sauce. Instead of noodles I used a peeler to slice zucchini and squash thin, tossed in salt and pepper, and cooked in oil for awhile on a low heat, then added to the simmering sauce.

Came out great! Glad I got fresh bay leaves and basil for this.

On the side I tried a couple slices of an oatmeal raisin loaf I baked today. Came out soft, not great for sandwiches but as a side it's a real nice flavor. Very moist. Makes me wonder if I should've baked another 5 minutes but it seems cooked through.

Added the raisins after hand kneading for 9 minutes and just sorta folded them in. Not the best way to disperse them but they're spread out okay enough I think. Anyone have better ideas for adding fruit/nuts to dough?

Just made pavlova for the first time! Need to spread the meringue more evenly because one side was a bit higher than the other but it came out pretty good.

Never made a meringue in general, I can't believe how huge egg whites get when beaten.

Pavlova guy here again, also tried making a lemon cake. Really enjoyed how this came out, but if I did it again I'd skewer some deep holes throughout the top before I lay on the syrup soak. Only used a fork and you can tell inside the slice where the syrup stopped dripping down.
