Because a novice restaurant attendee will assemble it wrong. Here's how you do it correctly:

Spread your sauces directly on the toasted bun halves. I dont care which ones, but it better be mustard and mayonnaise, while discarding the ketchup.
The lettuce is next on the lower bun. This protects it from the super juicy, medium-rare patties which are dripping with goodness.
The patties come next, if its really a double as pictured, then there should be a second slice of cheese melted in between them.
Tomatoes top it off, just below the sauced upper bun.
Not pictured, but mandatory: Caramelized onions and sauteed mushrooms. Surely this was present, but outside the field of view of the camera.
