The resteraunt closed ~2 years ago, and Burt passed away last year. A couple of guys that trained under him bought the resteraunt and the recipe and reopening the resteraunt.

Here's the thing m8, you are completely within your rights to like ketchup on your hotdogs. I do too. But if you are looking to experience something specific to a region like a Chicago-style hotdog, you should at the very least try it the way that it is most authentic. I agree that the sperging out about ketchup is annoying, but you were doing it wrong. But it's not too late, you can still make one at home:
