Chicagoans actually pride themselves on not eating the pizza they're famous for, asserting that deep dish is for the tourists.

They prefer the "Tavern style", which is the exact same as the vast majority of square cut thin crust you find in the upper midwest, save actually being a little shittier since it's made in places without proper kitchens.

Pretty sad frankly, going through that much effort just to be a contrarian over the food that makes your town notable.

I worked in several pizza places and have made all kinds of random pizza.
Don't put mayo in the oven, it separates and congeals and turns gross. Put it on afterwards.
Same with sour cream or creamy dressings.

Like you could buy or put it in a squirt bottle, or put it in a bag and snip a corner, and squirt it around in a thin line before you eat it. Or just dip your slice in it.

My local pizza place actually figured it out. They did exactly this, the mayo didn't turn gross in the oven though, but it simply mixed with cheese.

I tried like a year later and that time they had more tasty mustardy mayo (instead of the salad variety) and they added it afterwards.

Well our opinions differ here. I prefer them in wheat bread roll.

With either pickles or sun dried tomatoes (which work fantastically with liver pate, try it).

I'm wondering if the liver pate would just lose all its taste and turn soggy in oven, but that would only be found out by trying. Blood pancakes only lose their taste this way, I found out. Also brie just becomes rubbery.
