Get a whole chicken, remove it's skin, cut it into parts, trim the fats off those parts, and render that shit slowly. Don't burn it, let it brown and dry. Stop before it burns and collect all that shit and put it in the fridge. The fat will collect and congeal so you can spoon it out and use it for cooking or eat plain.

Eh, I'm in Toronto, and quite a few Bulk Barns (or Bulk city, or some kind of Bulk store) sells lard, e.g. the one in Bridlewood Mall.

You go to the shop and you buy it. Just go there and get what your recipe calls for, lard, suet, beef dripping, duck fat and goose fat are all in every supermarket and all are cheap.
