The body, and most crucially forgotten part of any burger is the patty. It is all very well using this weeks excuse for a bun, or smearing the thing with fancy toppings, but it means jack shit without some nice mince. I like half rump, half short rib aberdeen angus, with sweated onions, thyme, rosemary, mustard seeds, and a little garlic in my patties.
