So I have done some basic research on brewing sake. have made wine and "washes" for distilling later (limoncello final product) before and thought i'd give sake a try.

Here in Western Australia and the only koji product I can find seams to be for making Miso (the shop lady said).

Q1) is this the same bacteria/mould used for sake?

Q2) They had 2 types, a kind of softened rice (right) and a dry version (left). I presume the wetter version can be mixed into steamed rice for further koji propergation. Does the dry version have to be soaked to moisten for a while?

Q3) The wetter packet seams to infer to use the whey (for want of a better term). I assume this does not relate to sake making.

Q4) why does everyone spell it koji? isnt it kouzi? How do Japs pronounce it?

Long story short, translate these packets in 10 words or less......pretty please

Q5) Do people ever use jasmine or basmati or other fragrant rices for "jazz".

No such thing as "zi". The characters for sa, shi, su, se, so with the little " next to them change to za, ji, zu, ze, zo, respectively.

Godzilla's actual Japanese name is "Gojira". That'll help you remember.

Can't help you with the sake though. I just buy a bottle of Nigori every now and then.
