What are some good Mexican dishes for somebody without much cooking experience to make?

I'm a /trv/fag who spent a couple years living in India. Now that I'm back in the United States, I find that a lot of what I eat tastes too bland for regular consumption. We have a fair number of authentic Mexican restaurants in the city; I tend to like that cuisine a lot.

Bought some food and ingredients last night (chorizo, chicken breast, cilantro, tortillas, beans, jalapenos, bell peppers, etc), but have no idea what to do with them.

Help!!!

You could try a mole; it's basically the mexican corollary to curry.

Contrary to the image, mexican food isn't really that hot. There are a lot of nuances of flavors with different combinations of chilis, but it isn't mouthnumbing like a vindaloo.

I'd start with a variety of different tacos. Like another anon said, moles are interesting but somewhat time consuming. I've made Rick Bayless' Red Mole that was delicious.

If you can, get a cheap tortilla press and make your own corn tortillas. They're very simple, just masa and water but they blow away store bought.

Looked up some recipes for burritos and quesadillas and neither seem too complicated. Will give both a try and then maybe have a go with mole.

Try cooking Carne Asada, not too hard. Just remember that most online recipes call for too much shit (My mom uses salt and lemon pepper, if the lemon pepper doesn't already have salt). Less is more, it's all about cooking it right.
