I let the guest engage in conversation first if that's what they're comfortable with. I personally hate overly floaty serving. Servers should understand that they're there for the food not the company or their server.
The only time I start a conversation is when I box up their food (it's done table side at my place.) More often than not it can become awkward when I'm silently scooping noodles into a box and they're just staring.

I went to dennys a few days ago and I got this super chatty waitress when all I wanted was to enjoy my choose your own grand slam breakfast in peace. She told me that she wish she could have an awesome breakfast, then went on about what she had. Never did I ask her about it or anything.

I work in food service as well, and I don't ever engage first for those reasons. I try to be direct as possible and give the best possible service. I won't say anything extra to make people uncomfortable because I want them to come back and enjoy being there.

There's a waitress that I did see that caught my eye. I ordered some food and she asked me what I wanted and I said I didn't care and she didn't ask me dumb leading questions like most waitresses, she just went and got me some scrambled eggs. She also had a montone, indifferent voice, just like me. As a test, just before I left, I asked her what she thought about the newspaper headline about the stabbing and she said she laughed. That's exactly what I did too. Perhaps I should ask this girl out, but which way would be the wisest to go about it.
