I don't think the inside has skin at all. It's also deboned. There's a lot of flavor missing there, but what the big draw is, is the rich stuffing, and the sliced presentation.
It's feast food, though, and not only not ridiculous or bad, but within a historical context, it goes back a few centuries as something quite royal for the table.

When it comes to turducken, though, the stuffing is dirty rice offal and sausage rich cajun flavors. It's fun, and a variant of those who might be sick of the traditional flavors for these meats on the holidays, much as deep frying or smoking does to other beasts. Sage+turkey *yawn*. Sweetened sauces on duck or goose *yawn* Well, no one is serving chicken, it's just the middle sized bird.
