Forgive me if this is a retarded question as I am new to cooking, but how would I go about incorporating potatoes into that dish?

My current breakfast involves browning some diced onion in oil for 5-10 mins and then adding honey just as they brown. Then I add my eggs and mix until it is finished cooking.

At what point would I add the potatoes? And are those just regular diced potatoes?

Bake the potatoes first. Meaning you probably are using leftover potatoes straight from the fridge. When I bake potatoes, I make the entire sack of them, since they're so goddamn cheap, and the oven can easily bake 10 pounds of them at once for the price of $2.00. A cold baked potato can very easily be diced up and fried in butter with onions, its ready very fast, and has better texture and more flavor being twice cooked.

I wash them thoroughly in the sink with a scrubbing pad (no soap obviously) because I eat every bit of that delicious skin. Dry with a towel, stab with a fork 2 - 6 times each depending on size, then generously coat with oil. Use whatever oil you like, this time I used sunflower. The oil will oven-fry the skin making it deliciously tender. This makes a big difference, so always oil your potatoes before baking, and then generously apply coarse salt. The salt will stick to the oiled skins, some grains will fall off so use a good amount. Oiled and salted potatoes will drip in the oven, so bake them on a foil lined baking sheet.
Still easy and that tender skin is amazing. Because the skin is the best part, I prefer the smaller sized russets, which is great because more skin and lower price too.

I try to eat as much as I can and share some with roommate, but it freezes really really well. Easy lunch later when you can just pull it out and either microwave or put it on low heat on the stove.
