I am from SE Louisiana. I have never liked the traditional New Year fare. Ham or pork is fine but, my mother ruined it for me growing up. I can't stand black eyed peas, they taste like dirt. Greens are "ok". Usually they are mushy and lackluster. Cornbread is usually not worth it either, disappointing and sandy. I usually love traditional foods, they are usually nourishing and delicious. I would love to find another traditional meal that is more palatable.

2-3 bunches greens
2 cups chopped onion
2 cups chopped bell pepper
2 cups chopped celery
4-6 cloves chopped garlic
green onion for garnish
3-6 slices of bacon
Smoked protein of choice (couple of ham hocks, smoked turkey, Ox tail, smoked ham, whatever you want)
1 cup of wine (optional)
2 quarts of chicken stock, or enough to cover (sodium free)
1 cup of apple cider vinegar (optional)
2 TBSP of worchestershire sauce
2 TBSP of hot sauce, or to taste
3 TBSP paprika
2 TBSP cayenne
2 TBSP black pepper
1 TBSP onion powder
1 TBSP garlic powder
1 TBSP oregano
1 TBSP thyme
Salt to taste

Clean and cut greens to desired thickness. Heat enough oil in a pan or a stock pot to brown and render the bacon. Once browned, remove bacon, and add halt the onions to brown. Once browned, add half the bell pepper and celery, and cook until sweated. Add cooked bacon, and add greens slowly and allow to wilt. Once wilted, add protein of choice, wine, and enough stock to cover completely. Add spices, and bring to a boil. Once boiled, reduce heat and bring to a simmer. Simmer on low until greens reach desired consistency, and season to taste with salt. Garnish with green onion, or red bell pepper, and serve with corn bread.
