OP keep in mind that sometimes eggplant can be bitter if just sliced and cooked.
Not always, but it can be prudent to lightly salt it and fridge it for 30-45min before patting it dry and then using as you please.

And for cooking ideas, try roasting it whole. inside gets creamy and soft, roasted skin is pretty tasty too.

Pan sear eggplant in hot cast iron skillet (olive oil), flip and put in 350° oven till fork tender. Top with greek yogurt mixed with a bit of cumin and za'atar, and dried red currants reconstituted in brandy.

Spinach, oo, skillet, garlic, shaved almond and the rest of the currants.

Salt and coarse pepper everything to taste.

Stuff it with seasoned pork (inch thick semi-circles with another slice most of the way through to the skin to make a pocket), fry in plenty of oil until soft.

Or cut batons, fry until soft and add prawns, chilli and garlic and soy sauce for the last two minutes.

Both good with rice and chilli oil.

Yes keep this in mind eggplant can be bitter, if so you can salt it or brine it to remove bitterness.

on the whole you can aim for male egg plants as they have less seeds so are less bitter. Males have a dot and females have the line.
