Best Guac recipe? Does it even matter? Or does it come down to freshness of ingredients?

What matters is whether or not you like it simple or complicated. If simple is your thing avocado, salt, lime juice, onion, cilantro and a little jalapeno/serrano pepper is all you need. But some folks swear by adding tomatoes, cumin and even garlic. As long as you don't add mayo or sour cream you're cool.

The ripeness of the avocados makes a huge difference.

I put off making this guac too long, now I have some really ripe avocado. Gonna go for it anyway. Adding Cumin, garlic and cayenne to this. We'll see how it goes.

As long as you cut off any brown/grey off the avocado you should be good. Cumin and garlic are gilding the lily, but they won't wreck it.

As a mexican shitskin whose diet has a lot of avocado, i can tell you that the best guacamole is the simplest one: avocados, salt, lemon and pepper and that's it.

I think with guac, freshness matters a lot, but also use serrano peppers and the best, sweetest tomatoes you have access to, Vidalia onions, freshly cracked pepper and kosher salt, fresh minced garlic, only a little cilantro, and lime.

i like to roast or grill banana peppers and knob onions, give em a rough chop, then pound them in the mortar with avocado, salt, and lime

Personally i use the simplest recipe for guac that tops tacos or burritos. But guac as a chip dips needs a little more to stay interesting.

I like adding a little of the lime zest to make the guac taste a little brighter.
