Potato vodka gets it's fermentable sugars from the mash, which converts the starch from the potatoes, to fermentable sugars that yeast can convert to alcohol. This mash process consists of holding the potatoes at a certain temperature for a certain period of time, and the heat starts a chemical reaction that converts the starches to sugars.

OP would be better off just adding yeast to a straight up sugar mix, and leaving out the potatos, and all that other bullshit.

I've played around with using a reflux column with a homemade still. Yes, it requires fewer runs if your goal is to make a fairly neutral spirit like vodka, but that's not what most home-distillers are after.

Most home distillers that I know are making craft beverages. They deliberately avoid using a reflux column because they WANT more of the flavor of the mash to end up in the finished product--same reason why most professional whisk(e)y distillers use pot stills.
