I was raised in the first world where street food can be expected to be at least somewhat hygenic, and the first time I saw that shit I was skeptical as fuck. However, it never ever made me sick and the sammies taste like they're made out of God's own flesh. Fucker has awesome prices too and he'll get some wickedly long lines going at lunchtime.

It happens because of the low standards and enforcement that exists in the Mexican food / restaurant industry. There are farmers that will be glad to use human feces as fertilizer for food crops, shippers that don't give a fuck about maintaining proper temps, and street merchants gladly willing to serve you food that's been exposed to the pollution and feces laden dust in the streets all day long.

To say Mexicans are "lax" when it comes to their food sanitation and hygiene practices is an injustice, they're downright negligent.
