If I'm at a restaurant I will always get medium because I don't want to catch something. Although I won't even order anyway because I'd rather not eat something I can make at home perfectly fine on my own.

Sometimes, I like a blue rare, only if I'm cooking for myself or somewhere with a great reputation. But honestly, it's so easy to fuck up that I never even bother for myself.

I mainly order medium rare, which is perfectly acceptable. But, I order my burgers at most chain/bars/etc. medium, just because I don't trust people.

Sometimes you'll get a medium-rare and it isn't adequately heated in the middle which would cause a minor case of diarrhea for a few days, or even food poisoning for a week. Not worth it in either way.

I don't think it's worth the risk. I'd rather just do it myself and there's no one to blame other than me. Plus 9 times out of 10 they never let the steak rest so it sets. Steak just isn't worth getting at a restaurant.

Depends on the age of the meat.
I normally buy 4 steaks because I don't like to freeze them and have the first one as rare as I dare, then salmon the next day, then medium steak, then salmon, then medium-well steak, then salmon, then well done steak...
Just for piece of mind more than anything else.
But the short answer is I prefer medium rare. Remember that when I come to your house for dinner please.

Medium rare typically. Rare tastes too underdone, and anything above is hard as fuck to chew without a lot of flavor.

Depends on the cut. If I get flank steak, skirt steak, etc., I want it rare as fuck, just barely browned on the outside. For fattier cuts, such as picanha or rib-eye I can tolerate anywhere up to medium rare, as long as the fat's nice and melted.

Rare steaks seem cool until you realize the fat is raw and not rendered. Which isnt a problem with flank/tenderloin or a similar cut, but with something like a ribeye it is absolutly an inferior way to eat it.

If you blindfolded someone who said they only like rare steaks and gave them a choice between mid rare and rare, they would almost always chose the mid rare...way more juicy and flavorful.

The majority, if not all, of the bacteria on a steak is on the outside. If you aren't heating the steak to 160 (well done), you aren't killing any bacteria inside the steak (if there were any to begin with) below 160 degrees, so going to medium to 'be safe' is just pure idiocy.

If you don't trust the cleanliness of a restaurant, eat somewhere else or go well done.
