Grlling is definetely the best prep. You can simmer them with lots of onion and garlic. Let them take their time, somewhat like 40 to 50 minutes in low heat. Finish it with parsley and serve with white rice.

I'm not the guy you're replying to, but I marinade mine in wine then stick 'em on skewers and grill. They're red meat so you can season them like any other red meat. I alternate between using teriyaki sauce, plain 'ol salt and pepper, BBQ rub/sauce, and cajun seasoning.

The vacuum pack meat thing seems to freak out a lot of Americans. We also eat duck feet, chicken feed, duck heads, chicken wings, all kinds of gizzards, and seaweed salad in the same style. Pic related is a popular chain selling spicy duck necks. Perfect for nibbling on with an ice-cold beer.

Then we have stinky tofu (fermented then deep-fried), century egg (eggs cured in lime), and fu-ru (fermented bean curd in red or while oil). These are pretty common across the whole country. The problem with people finding these disgusting is that they eat them in ways they're not meant to be eaten. Like if you shoved a whole spoonfull of warm vegemite into someone's mouth it won't taste good. It's meant to be cooked into congees and buns and tofu etc.

Animal placentas (particularly goat) are considered very nutritious. Women might also eat their own placentas, hospitals will let you take it home and they make it into a soup. My mother ate her placenta, and my grandmother brought me umbilical cords she cooked into soup as a baby. I probably woudln't eat it now though. There's this whole 'you are what you eat' thing. So if you're anemic you eat blood pudding, if you're dumb you eat brains, if you just had a baby you eat the placenta (like a lot of animals do).

I have Fuscia Dunlop's book on Sichan cooking. She studied Chinese cooking in China under a government-licensed cooking school, and the book is well regarded as being "authentic". There's no General Tso's or egg rolls in there. Yet the recipe for hot-and-sour soup is very similar to what you'd get at an American Chinese place.

Yea we eat leftovers but we dont mix it in a bowl with rice and call it a dish. Like how ketchup on white bread isn't a dish. Just because you might eat a pickle with some mustard late at night when the fridge is empty, you don't go to China and open a chain of condimented pickle restaurants and call it 'Murrca Crunchies. Only beggar food scraps have rice and leftovers served mixed up. If you watch some Stephen Chow films like King of Beggars you can see the beggars eat this stuff. It's basically pig slop.

White rice is served separately unless its fried rice or a donburi bowl (which is Japanese anyway).

Compared to other things in this thread, anchovies are pretty tame, and it isn't specific to the US, but I really love them. I eat' em straight outta the can. Delicious, salty things. I also eat sardines. I used to love Vienna sausages as a kid, but grew out of them. I've tried herring before, but its looks ugly and isn't tasty.
