Why do people still add bread to meat (e.g. with burgers) in modern times? Wasn't it just something you used to need to do to take up space back when meat was scarce?

I think salsibury steak is a better use of the meat for an actual meal

but the burger does make it a good small meal (think white castle meme burgers) while a bigger burger is good for a fast food type serving. The big macs third slice of bread is straight dumb though.

It's a container for ingredients, stupid.
That's like asking why we still use taco shells or pizza dough instead of just eating the ingredients with a fork. It's a CARRYING device. Sandwiches were mostly a way for construction/mine workers to take a lunch they could eat with their hands and required no preparation. Same thing with meat pies.

Next time you're at Mcdonalds ask them to remove the middle bun and to use quarter pounder patties. They will do it because it's not any more work than they would already be doing anyways.

High end bun - A flavor component in of itself.

A toasted Brioche or Sourdough bun is a reward in of itself.
