Yo, /ck/, I need advice.
A friend of mine will be bringing some frozen sardines later today for me to cook. I had this idea in mind:

>sear them in a wok
>take them out
>in the same wok make a sauce
>tomatoes, onions, garlic, ginger, lemon zest, parsley, green onions (or scallions or chives or whatever the fuck you call them)
>them put 'em back on and let them simmer in the sauce
>like a brazilian moqueca (google it)
>also make some white rice to go along with it

I've done this exact same recipe with catfish before, shit was cash, but I don't know if it will work with sardines as their taste, size and shape is completely different. Should I make it in the wok or another kind of pan would work better? Do you guys think it will turn out good? If not, what should I do with the sardines? Thanks in advance, will post pics when it's done.

Smoke them. Mash them up. Mix with mayonnaise, onion, spices of your choosing. Spread on toast. Eat.

What's a quick and cheap way to smoke them? I'm kind of a poorfag, so my resources are limited. If it's too complicated and resource/time consuming, I just won't be able to do it.

theres literally a threa dnot that far down that talks about this.

theres a method where you soak a paper towel in the oil found in a sardine or tuna can.

you ignite the paper towel, in the can, and allow it to burn out (10 minutes).

the contents are smoked in the process.

i suggest finding the thread and reading it. a few videos are included.

you could steam them and mash into paste
to make fish salad. though smoking as anon suggested adds a lot more flavor because of the higher oil content of the fish.
Slash their sides and tossed in olive oil garlic and lemon then grilled is also a great way to prepare them.
Are these fresh caught and already gutted?
I clean mine right after netting, and gut and rinse in saltwater. chlorinated tap water makes oily fish taste off.

Butterfly them first, wash and grill them with parsley and olive oil. Assuming they are fresh. Otherwise throw them in the trash.
