I'd say that southern food is pretty much the last big "American" cuisine. By "American" I mean not mainly influenced by 19th-century-and-later immigration (see: burgers, pizza, etc). Prior to then, the common foods nationally, the north included, were an amalgam of European and indigenous foods, with more African towards the south. The south maintained this traditional cuisine and the north lost it because immigrant foods displaced it.
