I'm in Japan right now. Not sure if I'm spelling this correctly but, Tonkotsu ramen is the best I've ever had. Pork based broth that's a bit fatty. It's delicious.

Learn how to make it, and you'll probably get more customers than fish based ramen. Especially if you're in the U.S.
