Why do people point to things like steaks and roasts as the height of meat?

Any retard can make those well. The true, lofty height of meats is sausages. It takes actual skill to make a sausage well (and I mean actually make, not just cook).

I'm guessing it's because of the very fact you stated in your post:

Anyone can make a good steak or roast, thus people are used to eating good steaks and roasts.

Good sausage (in the US anyway) is fucking rare. Most people have never had a good sausage--they've just had whatever major brand their supermarket carries. That's not very appealing compared to a steak, so that's probably where the confusion started.

I'd extend that to all types of charcuterie. I've been learning for the past few years. I can make a mean fresh sausage, but I haven't gotten into the fermented types like salami, etc, yet. In my opinion the epitome of meats is fine cured hams, like old-school American country hams or Spanish Jamon Iberico.
