From Ismail Merchant's cookbook (the movie producer, one-half of the James Ivory producer/director team), I've been making a posted recipe from his sister Sherbanu, as a side for years to yogurt chicken. A very small amount of lentils can go into a pot of indian flavors spiced rice, and it makes the rice get this fluffy delicate light texture change, without being a full beans and rice experience. First saute in some butter or olive oil, some onion, a stick of cinnamon, 1 large or 2 small bay leaves. Try 1/4 cup lentils for each cup and half of dry rice that is added, add a 1/2 cup water for each 1/4 cup lentils and steam as usual for your pot. Remove stick and leaves before serving.

You can spice is differently each time, from cumin and black peppercorn, to bits of carrot. The trick is that you want it to complement whatever it is you made as other mains and sides, but not be the exact same profile. So like with garam masala or curry powder blends, some will be heavy on tumeric, heavy on ginger, light on cardamom....so whatever it is that is light or missing, like fenugreek, the accompaniment can be heavy on the missing spice(s).

Back when I was a kid, besides soup, my mother would mix it with rice, and make it a lentil-n-rice pilaf, shit was really blunt but really nutritious.

However, as I have grown up, being curious and all, i have tried it with a variety of things such as, grape vinegar and some salt,
or lemon juice and cayenne powder,
greek yogurt...

Tl;dr; Lentil-n-rice pilaf can be quite bold in it's bare form, but it all boils down to some extra spicing, ifykwim.
