So I'm at the beach with my family, and we're cooking ribeyes tonight and I wanted to sautée some stone crab claws for surf n turf. Does anyone have a recipe?

Stone crab claws are good steamed and chilled, or served hot from the steamer (sauteed? naw, they can get overcooked due to the extra thick shells), and then served with the Joe's famous stone crab dipping sauce. I suppose you can do them up with butter and lemon wedges, but since they're so naturally mild buttery and lend themselves well to the Joe's piquant creamy dip, which tastes best made ahead. Use Duke's mayo without the sugar, cream is the only sweetness.

1 tablespoon Colman's dry mustard, or more to taste,

My favorite thing to do with those is to steam them first, then crack the shells with a mallet or the back of a knife. Then stir-fry them with garlic, douchi (chinese fermented black beans), a big fistfull of dried red chilies, and a bunch of garlic chives (or green onions if you can't find those).
