I made some tortilla soup with chicken thigh chunks, jalapenos and black beans this morning and it was delicious

Currently have 1 1/2 pounds of diced mushroom stewing in a bowl of salt for tomorrow morning, I'm doing an 18th century mushroom ketchup recipe that I found on youtube that involves drawing all the essence from the mushrooms

as for me, I'm makin chicken and noodle
roasted a whole chicken, got it cooling to debone
sauteed up some onion celery, carrots and sweet peppers(unfortunately out of garlic)
added the roasting liquid to the veggies, and have it on low to keep warm till the checken is deboned, and I get some macaroni cooked to add to it
when it's done it'll be kinda like chicken vegetable soup but with about half the liquid of soup

One of the reasons I can't control my budget is because leaving the house is terrifying. I can honestly say I have broken my record this year by being outside twice in one week.
And there are no foodbanks here I think, there are no real poor people in socialist scandinavian utopia, only really incompetent people that can't manage their budget, like me.

I just put two massive racks of beef ribs in the oven, they'll be in there for about 4 hours at 275. They come out super tender and you can easily eat the marrow as well.
