It's probably the shape of the cheese. In wisconsin we have a different name for every shape, it's a quality control thing. In other countries you tell what cheese it is by the exact type of manufacturing defect. We don't have manufacturing defects so our cheeses are distinguished by the number, shape, and the color of the dyes used in the cheese itself, or, in a particularly expensive and rare cheeses, the wax shell.

My boyfriend can only eat sheep milk cheese curdled with non-bovine rennet, so I had to try a cheese produced by Cypress Grove called "Lamb Chopper" and it was honestly everything that you could want in cheese: buttery, complex, and a little sweet.
There's a brand of goat Gouda, I think it's under either the "Cablanca" brand name, that I like a lot as well. It's like typical goat cheese, but it's got more complexity, and the "goat funk" is milder, but also more refined.
I have a soft spot for Jarlsberg. It's not terribly sophisticated but it's got a nice, mild, creamy flavor. Grandfather always gets it when he goes to the wholesale.
