I make mine out of leftover corned beef, braised beef/pork, or duck legs. Big mountain of onion cooked way down, little bit of grated garlic cooked just long enough for fragrance, mild peppers if they're handy and I'm in the mood. Seasoned with black pepper, cayenne, maybe thyme. Chopped red potatoes are my ideal because they hold together so well but if mealier potatoes are all that's leftover you just gotta make do. Whole fingerlings can work real well too. Always use fat from the meat if there's enough to cook down all the veg. Once everything is well integrated I settle it all down in one layer and leave it until it crisps up a bit on the bottom. If I'm using duck legs I'll peel the skin off and fry it crisp before I do the rest of the hash and crumble it over the top for serving. Adds a nice chicharon-esque flavor to a whole serving with just a little pinch.

Scrambled rules, by themselves or as a side really, but I poach my eggs runny. Omelets with cheese and diced veggies. I haven't as often played with garnishes or making anything look fancy in the mornings.

Since I'm young and healthy I've been cooking eggs in the same pan after cooking meat or veggies to help clean up the grease. Gnarly.

I wouldn't mind hard-boiled eggs in the morning but I'm not partial to boiling water in the morning so I just cover the pan to poach my eggs. I like to think the trapped water vapor does the trick when done just right.
I'd also love to try making soft-boiled eggs sometime using that double metal pan method or whatever, with a side of ramen like they make in those noodle bars in Southeast Asia.

I like to start my eggs the night before. I have an under-cupboard light that emits a small amount of heat, so I like to leave 6 eggs in a cardboard half-carton on the counter underneath. I leave the eggs in the carton, opened, at around 10 pm the night before.

By the time I wake up around 7 am, the eggs should be thoroughly sweated and the cardboard carton should be slightly damp. If it isn't, the eggs haven't sweat properly, so I won't even bother making anything and just put them back in the fridge.

After sweating, it's a fairly simple scramble on a low heat, but the eggs cook extra fast and evenly because of the sweating process. It works wonders, I tell you, and works for any style of eggs.
