Usually sunny side up desu. I always used to flip them and make em all ugly, but then I learned to do it properly, and ever since I've been a sucker for that runny yolk.

I also make tamago once in a while, and I'd like to get more diverse and creative with omelets in general. Unfortunately I've got a crooked ass electric range (college) which makes it really difficult to keep egg from just running to one side of the pan. And the temperature control on electric ranges is garbage. Avoid at all reasonable cost.

put them in a bowl, put grana padano in it, pepper and salt, scramble them, and let them rest. fire up the heat, go to the lowest heat possible, butter it up let some bacon fry in it, get butter bacon fat mix and pour my eggs in it, scrambling it at the lowest heat until I get sheets of nice egg and cheese.

Thanks for the suggestion. I tried Tesco pickled eggs and they were nice but I would have preferred them boiled normally. I think I just really like boiled eggs.

he means tamagoyaki which is just the nip omellete. Usually sweet with sugar mirin and soy sauce but you can do more savory versions with dashi.

You dont need a square pan but it makes it easier to fold. Its sorta pointless with other stuff but its nice as a side dish for rice
