I am brushing bbq sauce on the pork for extra flavor, specifically the flavor of burnt and caramelized HFCS bbq sauce because I really enjoy it

Here's the final haul. It was all very good. The hearts were perfectly done and very tender. Pork was juicy and had tons of great grilled flavor. I've got leftovers for a good 2 days.

They taste like offal. Not quite as bad as livers or gizzards or kidneys since hearts are still muscle, but they have that earthy taste.

They can be tender. CAN be. You have to cook them right. The heart is, naturally, a hard working muscle, and will be chewy as fuck if you don't take the steps to make it not so. It does help that chicken hearts are small.
