So here's the thing about velveeta in Mac n cheese

I like the way it performs. The way it melts, the stability of the emulsification, and the ability to integrate other ingredients is pretty great. I know from multiple experiments that I cannot achieve the same results with roux based cheese sauces. At some point I'm going to play around with using chemical emulsifiers and real cheese to see how that works but that's a project for another day.

Also, the flavor of velveeta is pretty mild. The notion that it will cover up the flavor of the other cheeses I'll be adding is patently absurd. I'll be mounting the sauce with real cheese specifically to achieve the opposite result.
