It's not. What you heard about not eating raw pork was seriously exaggerated.

The risk with undercooked pork is trichinosis, a parasitic disease. However, it's incredibly rare nowadays (in the developed world, anyway). Really really really incredibly rare.

for example. according to the CDC in the USA there's only about 10-15 cases per year, and the majority of those are hunters eating wild game meat cooked in the field, not meat that's been FDA inspected and sold for retail sale (or restaurants).

I make grill pork kabobs and cook it to where it is slightly pink but still cooked through. If you cook it anymore than that its not worth eating in my opinion.

Sometimes my family cooks pork roast. My mom is nuts and insists the pork has to be overcooked. The few times she pulled it out while it was still slightly pink are the few times I actually enjoyed eating it cooked. Probably equivalent to a medium/medium well cooked steak is perfect for a pork roast.

I have eaten raw bacon plenty of times to prove a point to the whiners who nonstop bitch and moan about undercooked meat but that's a topic for another thread.

Today my Dad who is Lebanese made ibbeh nayyeh (pic related) from steak. To be safe you can freeze the meat but we don't bother. It is important to use quality meat and process it with a clean food processor. Meat grinders at the butchers are not to be trusted for this dish unless you are in some ethnic store that prepares the meat daily for this dish.

I have eaten kibbeh my whole life against my mothers will and never remember becoming sick, compared to time off work because of bad mainstream sushi or seafood.

Kibbeh has a great fresh natural taste and is mildly spiced. It is a filling treat and best enjoyed with a beer or drink of arak. Most of my friends who are willing to eat sushi are willing to try kibbeh and all enjoy it. I always tell people that Europe has similar dishes such as steak tartare and carpaccio. Even first timers who are the well done steak kind of people don't mind it as raw steak once they try it. My poor mother usually fries it because she is afraid to try it raw.

I'm about to eat some of the leftover kibbeh as midnight snack as soon as this reply is posted.

Eggs for example.
In Yurop, they are sold unwashed (aka covered in dried hen pussy juices). It's a natural protective layer, and eggs are sold unrefrigerated.
It's banned to sell washed eggs, as this procedure can be dangerous.
(I've read somewhere that it encourage producers to use a cage system where the eggs are not covered in shit.)

In the US, eggs are washed. The law define water temperature and stuff.
The problem is that if the inside of the egg is disease free but there are bacteria outside, washing the egg can push bacteria inside (egg shell are porous.) Hence the importance of temperature and time.
They are then sold refrigerated.
It is banned to sell unwashed eggs (beside some exceptions like pasteurised eggs and farmer market stuff. I assume there's a warning somewhere.)

There are also differences about animal tracking from farm to dish, poultry vaccination and cremating entire farms livestock in some cases.


Idk if a method is better or not, I'll let /pol/acks claim superiority. I imagine changing a stupid law from the 70's would be a mess nowadays, so debates are even more useless.

Statistics are pretty much useless since raw yolks on (beef) tartare isn't exactly an American stereotype, the few nutcase who do it are not representative.

NB : presenting the yolk in a shell as in pic, even if "traditional" presentation, isn't safe. Without the shell it should be OK.

They might go a little higher, but if so not by much. Five or so years ago the Department of Agriculture lowered their recommended internal temperature for pork from 160 to 145 degrees because trichinosis is considered so low risk that they no longer advise heating the meat enough to kill the parasite.

There are other issues regarding raw pork, but they're largely the same as any other raw or undercooked meat product (salmonela, e.coli, etc)

In general the danger is lower than government advice makes it sound (and the risk varies based on many factors), but you have to keep in mind that government advice is issued with public health rather than individual health in mind. Even when the individual rate is very low, you can prevent a lot of cases of disease by convincing most people to use preventative measures.

It's to do with climate. I can only speak from my countries climate but here in Australia we can eat wild pigs south of a certain point because anything north of that is warm enough for a certain disease or parasite to live in the pigs. The same goes for eating pork, not raw but not well done, when the pigs are farmed in the cooler southern climate
