What you could do is get some imitation lobster meat and get a real lobster. Scrape out the real lobster for your self and cram the fake lobster into the shell. She will have the aesthetics of a real lobster dinner but will still retains her vegetarian habit. Problem solved.

you could also make a cheese fondue which is really nice to eat together - goes with white wine of course.

you can also go italian mode, homemade tortellini with for example ricotta spinach filling in sage butter + white wine.also you can always take standard pasta dishes like bolognese and use soya granules instead of mince + red wine. doesnt taste too bad when your seasoning is good.

for desert you can do basically everything, chocolate souffle, tiramisu, panna cotta (if she is okay with gelatine), fried banana with honey, etc

you could also make a minestrone if you want soup first, and cheese and fruit plate afterwards followed by coffee

Man, there are tons of great vegetarian meals out there. Just go on Pinterest and search "romantic vegetarian food" and you'll be rolling in it.
Growing up, I had meat-based diet and now I've slowly become practically vegetarian. I just wish I'd been warned how much vegetarians fart before hand. I was concerned about my increase of gas for a while and thought there was something wrong until some vegan friends told me that it was just normal with the diet. Good luck OP.

Ethiopian food also works, Orthodox lenten ethiopian foods are delicious

My native cuisine is mostly vegan, but I do eat meat. I went full vegan for a short bit, though not intentionally at first. See, due to the variety of vegan foods I grew up with, I could cook/eat that way for a weeks and not repeat the same meal once during it. By the time I'd realised I hadn't had any meat or eggs or dairy for a while I decided to just go with it a little longer until I couldn't ignore an omelette, a burger or a bit of cheese.

Anyway, it was pretty okay except for the more... colourful... side effect. I'm talking gas.

But not any regular gas, no sir.

Gastro-intestinal armageddon. Calamitous flatulence like trumpets calling the demons back to hell. Guttural pronouncements so loud, they drowned me out as I apologised in vain for my down under disruptions.
And the odour! I had to wander room to room for fear of succumbing to the noxious amnesia gas coming from the back of me and forgetting my own name by morning. An olfactory sensation the likes of which I've never experienced, as though a thousand skunk corpses all let out one final spray in unison. Like a devil had just been exorcised from my body and whose only escape was through my rectal sphincter.

As far as the wine goes, I would pair the dish with something that complements root vegetables: a cabernet franc. If you disregard that advice, just remember to go red because white wine is for faggots.
