Tomato based sauce:

In a sauce pan on low heat, combine the following.......

1 cup ketchup, 1/2 cup water, 1/2 cup apple cider vinegar, 1/2 cup brown sugar, 1 tsp salt, 1 tsp black pepper, 1 tsp chili powder, 1 tsp cayenne, 1 tsp red pepper flake, 1/2 tsp garlic powder, 1/2 tsp cinamon

Allow to simmer on low for about a half hour.

Adjust the brown sugar up or down until you hit the desired sweetness.

Best if given a day, or more, to combine in the fridge before using, however, you can use it as soon as it's done.

Because there's only one good kind of barbecue sauce right? Let's ignore carolina vinegar sauce, memphis red sauce, kansas city slop sauce, mustard sauce, and any variants not mentioned. Barbecue sauce isn't about limiting yourself, it's about pushing borders. My last homemade batch had a pound of dried dates in it.

Sadly, barbecue sauce is a cornered market right now. I've tried them all and I have just ended up making and canning my own sauce. I no longer have to worry about my sauce being crammed with shit-tier ingredients like corn syrup, and I can fine tune the spices for whatever dish I'm making the sauce for.

I'm an award winning FBA cook.

The answer is that it depends on the meat you are cooking and personal taste. There is no end all beat all sauce. My team changes up our sauce every competition, sometimes slightly sometimes majorly. You can cook something and use a sauce one week and get a perfect score, then use it the next week and get shit.

If you forced me to say my favorite sauce I guess I would say the one we use as a "base" for most competitions and that is "Blues Hog". We usually mix that with agave honey, Cimarron Docs seasonings, and whatever else we think might please the judges that day.

No, but I used to make a personal "sloppy joe" with just very browned ground beef and onion. Then I'd hit the pan with BBQ sauce, til it cooked down and got a little glazed on the crumbles. I'd serve on toasted bun, bread, or even an old hot dog bun. Sometimes with cheese. It's good with all types of BBQ sauce, whether a mustardy one, or smoky and sweet. FAST if you portion out individual burgers to your freezer ziplocs. It's second best to actually grilling a burger brushed with sauce. Cooking the sauce takes out some of that raw vinegar of a bottled sauce.

48 year old here, and our family and everybody else’s used Open Pit for decades until Sweet Baby Ray’s came out, which is now the standard.

I remember years back that mom accidentally bought a bottle of Kraft BBQ sauce and it was horrible and a buddy was an odd-ball who liked KC Masterpiece, which I thought was fine.

As for the limited production “artisanal” BBQ sauces everybody is memeing about, I like Chicken Shack’s house recipe but as they’ve become so expensive, I never go there anymore and it’s not available in grocery stores (as far as I know).

You could use is as a condiment if you want, but its intended purpose is for grilling or BBQing meats. You start out by cooking the meat most of the way through. Then during the last few minutes of cooking you coat the meat with the sauce. The heat from the grill caramelizes it. That's why you add it at the last minute--if you put it on the meat too early the sugar in the sauce would burn well before the meat was done.
