Come on in co/ck/s

We're making red beans and rice (assuming you have basic spices)

Ingredients
>5 cans kidney beans
>2 small onions diced
>3 celery stalks diced
>2 bell peppers diced
>2 cloves garlic diced
>cheap smoked meat product (i used turkey necks, can use ham hocks etc)
>rice of choice
>spices-cayenne, oregano, salt, pepper
>dash of red wine vinegar

Saute down the veg a bit untup onions are translucent and peppers are soft

Once the veg has been sauted add the turkey necks , beans, tomatoe sauce and 2 cups of water. Cook on high until a soft boil begins then dump down to low. Season as needed but be conservative with the salt, the smoked meat products will add a lot

Cook down the whole mixture for about 2.5 hours until there is just enough liquid to cover the beans. Add cayenne to taste. I added a little bit of red wine vinegar at the last 15 minutes to complement the richness added by the turkey necks.

Pick off whatever meat you can get off the turkey necks and serve the dish over your favorite rice. Easy, cheap, filling and delicious.
